Sardinian Ravioli - a revelation!

How this dish has escaped Italian restaurant menus all over the world astounds me. In Perth, Western Australia, at neighbourhood pizzeria Amore Mio, classic Sardinian food is proudly celebrated. Culurgiones is a traditional ancient pasta shape which resembles a grain of wheat. Made with fresh durum wheat pasta they are handcrafted individually and filled with creamy potato, DOP pecorino Sardo cheese, mint and a fresh garlic EVOO infusion. Texturally, these have a superb mouthfeel. Finished by seasoning with a light pomodoro sauce, grated pecorino & fresh mint. Soft and pillow like, they are lighter than they sound, the flavours balancing superbly.

Are these the best ravioli I’ve ever eaten? I think so! Traditionally made in Sardinia for special occasions such as weddings, that’s all fine, but I won’t be waiting for any event to be having these again - Bellissimo!
